Turkey ala King

This is a simple recipe, but very effective ...

There are several ways to work this ... Either (a) use Turkey & Gravy as the base or (b) make it from scratch

TURKEY ALA KING

For Gravy: 
1 qt water {either all water, or half milk/cream}
1/4 C butter
1/2 C flour

For Fillings:
1 cup turkey, chopped/shredded
1/2 onion, chopped/diced
2 stalks celery, sliced thin
1 can peas
Salt & pepper, to taste
Garlic powder, to taste
Onion powder, to taste

Melt butter over medium heat, sweat the onion & celery.  Add salt to help soften the veggies.  Mix in and cook 1/4 c of flour(reserve the rest), when it begins to take on some color slowly add the quart of liquid stirring well after each addition to prevent lumps.  Drain peas, reserving liquid.  
Add Peas & turkey to the pot. Add remaining flavoring.

Allow the sauce to thicken.... IF it gets too thick, add reserved water from peas... If it doesn't thicken enough, mix remaining 1/4 cup of flour into the reserved pea water and mix in.

Serve over:
Mashed potatoes
Rice
Biscuits
Toast
Bread
Stuffing
Etc.

The family really likes this recipe ... Very rarely are there left overs.

If it just will NOT thicken, add a can of cream of mushroom soup, but it will change the flavor.

You can also use dehydrated onions, mushrooms, or freeze-dried peas -- it will absorb some of the liquid so you will need to adapt
