Makaron z grzybami i kiełbasą włoskiej

Okay, this isn't really a Polish dish ... But m of Polish decent (100%!) so I like to name my creations Polish names -- forgive me.

Makaron z grzybami i kiełbasą włoskiej

3 Italian sausage links
1/2 lg. onion, diced small
5-6 mushrooms, sliced thinly
1 can Diced Tomatoes
1 can tomato sauce
1 can/jar spaghetti sauce (I prefer Hunts in a can, any flavor)
Italian seasoning, black pepper, onion powder, salt ... To taste
1/2 - 1 box of noodles (I used twisty ones)

Prick the skin on the sausages and proceed to brown them in the pot you are going to cook the dish.  Brown the outside - don't worry about it cooking all the way through, that will come in a bit.

Once browned, remove it and set aside until cool enough to handle.

Meanwhile cut up your onion and sauté it in the drippings left by the sausage, stirring often so it does not burn.

Slice your sausage into coins and add it to the hot pot with the onions.  When nearly cooked add the sliced mushrooms. They cook rather quickly so be sure to add them last - stir & sauté it all.  Once the mushrooms have limped up, add in the diced tomatoes.

When those get warm add in the sauces plus one can of water (I poured it between the two sauce cans to get all that nummy tomato goodness). Add in the spices & tomato powder.

Bring to boil THEN add the pasta.

Cover & put heat to med-low heat, cook everything together in the same pot.
Cook for 15 minutes.

Stir & check liquid level - taste your pasta to see if noodles are cooked, if not add another 5-10 minutes ... If more liquid is needed add a bit more water and bring back to boil before lowering heat .

Cook until the noodles are done to your liking and the sausage is completely cooked rough.

 
My dinner (with a few mouthfuls missing) ... I added a bit of garlic butter for extra flavor.
